Irish Quiche

My sister visited a few months ago and we went to a local place for Quiche and since then I have had such a craving for it. I decided I would try to make my own but give it an Irish twist. What makes everything more delicious, yup you guessed it – Guinness and Irish Cheddar! Two of my favorites. I also added bacon and some fresh kale ( now it is healthy right?). The quiche was so simple to make and was just as good as the one I had in the restaurant. I used a ready-made pie crust because I did not have much time but you can make a fresh crust. I sautéed my onions in the Guinness which added a wonderful aromatic flavor to the quiche. This quiche would be great for a brunch, a shower or a delicious dinner. I paired it with a fresh salad and everyone at home loved it. Hope you enjoy!

Ingredients:

6 Eggs

1/2 cup chopped onion

1 1/4 cup Irish Cheddar

1 clove of garlic

1/2 cup chopped kale

1/2 cooked bacon

1 ready-made pie crust

1/2 cup of Guinness

Salt & Pepper

Olive Oil to cook onions.

 

Directions:

1. Preheat oven to 350 degrees.

2. Cook the  onion in olive oil until tender.

3. Add a chopped clove of garlic and cook for about a minute – do not let the garlic burn!

4. Add the Guinness and cook until Guinness is absorbed. Meanwhile finish off the rest of the Guinness in the bottle while you wait!

5. In a bowl crack open the 6 eggs, add the cheddar, salt and pepper, cooked bacon and chopped kale. Mix well.

6. When onions are done mix them into the egg mixture.

7. Pour mixture into the pie crust and sprinkle with a little more Irish cheddar.

8. Place into the oven for approximately 35 minutes or until quiche is set and golden.

9. Quiche can be served with a salad and more Guinness of course!
